Solo Travel This summer - Adventure

I am looking for some inspiration for a solo travel (open to a group experience) Off the beaten path, europe, asia, us, any place that you have been to and loved! I love hiking, the water, paddle boarding, outdoors, beautiful sites, food, culture, books, etc. WOuld love something active but not impossible (not looking to hike Everest....yet :). ). Please share your fave experiences!
